Rainbow Poke Bowl Recipe (Get Me Glow Collaboration)

INGREDIENTS (SERVES 2)

  • 1 diced apricot

  • 1/2 diced mango

  • 1/3 cup peppers

  • 1/3 cup edamame

  • 1/3 cup pomegranates

  • 3 tsp soy sauce

  • 1 tsp sesame oil

  • 1/2 pressed garlic

  • 1/2 tsp grated ginger

  • 1 tbsp rice wine vinegar

  • 1 tbsp peanuts / cashew nuts

  • 2 tsp chia seeds

  • 1 tsp black sesame seeds

  • 1/2 diced raw salmon (sushi-grade)

  • 1 cup quinoa (no need to rinse if you like the nutty /earthy flavour)

  • 2 cups chicken or vegetable broth (not suitable for babies < 12mo, avoid if possible. Can be replaced by water instead)

METHOD

  1. Add quinoa and chicken or vegetable broth to saucepan on medium-high heat and bring to boil

  2. Decrease heat and cook uncovered until quinoa has absorbed all the water (about 20 min)

  3. Remove from heat and leave to cool down 10 min, then transfer in fridge for an hour

  4. Once quinoa is cooled down, add all toppings: salmon, apricot, mango, avocado, edamame, red peppers, coconut, peanut, spring onion, sesame seeds, chia seeds.

  5. Add soja sauce, sesame oil, rice wine vinegar, ginger and garlic in sealed jar and shake till all ingredients are combined

  6. Add sauce to poke bowl

  7. Serve cold
