Veggie Fritters Recipe

INGREDIENTS

  • 1 egg

  • 1 ½ cup roasted veggies or any leftover veggie from a previous meal (my favs are carrots, peas, broccolis for this recipe)

  • 1 cup cooked quinoa

  • 1/2 cup flour

  • 1/3 cup oats

  • 1/3 cup grated cheese of your choice (parmesan or gruyère for example)

  • 1 tsp cumin powder

  • 1 tsp mild paprika

  • 1 tsp oregano

  • 1/3 chopped basil

  • 1 pinch salt (not suitable for babies < 12mo, avoid if possible)

  • 1 pinch black pepper

  • 1 tbsp olive oil (for non-stick frying pan)

METHOD

  1. Mix all ingredients in one bowl

  2. Grease non-stick frying pan with olive oil at medium-high heat

  3. Use a tablespoon to shape and apply mix in pan

  4. Cook 2-3 minutes on each side until golden

  5. Repeat until there is no mixture left

  6. Serve with plain yogurt and a pinch of sumac (excellent dip)
