Veggie Fritters Recipe
INGREDIENTS
1 egg
1 ½ cup roasted veggies or any leftover veggie from a previous meal (my favs are carrots, peas, broccolis for this recipe)
1 cup cooked quinoa
1/2 cup flour
1/3 cup oats
1/3 cup grated cheese of your choice (parmesan or gruyère for example)
1 tsp cumin powder
1 tsp mild paprika
1 tsp oregano
1/3 chopped basil
1 pinch salt (not suitable for babies < 12mo, avoid if possible)
1 pinch black pepper
1 tbsp olive oil (for non-stick frying pan)
METHOD
Mix all ingredients in one bowl
Grease non-stick frying pan with olive oil at medium-high heat
Use a tablespoon to shape and apply mix in pan
Cook 2-3 minutes on each side until golden
Repeat until there is no mixture left
Serve with plain yogurt and a pinch of sumac (excellent dip)
