Butternut & Sweet Potato Orzo Recipe
INGREDIENTS
1 cup diced butternut (2 cm pieces)
1/2 cup diced sweet potato (1 cm pieces)
1 red onion finely chopped
1 garlic clove
1 cup orzo pasta
3 cups chicken or vegetable broth, boiled
(not suitable for babies < 12mo, avoid if possible)
250ml sour cream
1 tbsp olive oil
2 tbsp grated parmesan cheese
METHOD
On medium-high heat, add olive oil, red onions and fry until soft (3-5min), then add garlic, butternut, and sweet potato (5min)
Over medium heat, stir in orzo pasta for 1 min, then add boiled chicken or vegetable broth
Simmer uncovered until orzo is tender and liquid is absorbed, stir often for about 10-12minutes
Add sour cream and parmesan cheese and simmer 2-3 min, then remove from heat after
Serve warm
