Creamy Basil Pesto Recipe
INGREDIENTS
2 cups fresh organic basil
1/2 cup unsalted cashew nuts
1/3 cup grated parmesan or grana padano
1/2 squeezed lemon
1 cup olive oil
Optional: 1/2 garlic clove (it may be too strong for babies and toddlers)
Pinch salt
METHOD
Blend all ingredients until smooth
Serve cold as a topping for salads for example or;
Serve as a sauce for pasta: cook pasta al dente, keep pasta water on the side, mix pesto and pasta in pot and add a few table spoons of pasta water until all equally mixed
Keep in fridge maximum 7 days
