Creamy Basil Pesto Recipe

INGREDIENTS

  • 2 cups fresh organic basil

  • 1/2 cup unsalted cashew nuts

  • 1/3 cup grated parmesan or grana padano

  • 1/2 squeezed lemon

  • 1 cup olive oil

  • Optional: 1/2 garlic clove (it may be too strong for babies and toddlers)

  • Pinch salt

METHOD

  • Blend all ingredients until smooth

  • Serve cold as a topping for salads for example or;

  • Serve as a sauce for pasta: cook pasta al dente, keep pasta water on the side, mix pesto and pasta in pot and add a few table spoons of pasta water until all equally mixed

  • Keep in fridge maximum 7 days
