Quinoa Coated Fish Recipe

INGREDIENTS

  • 1 cup quinoa flakes (ready to use)

  • 1 egg

  • 1 cup spelt flour

  • 4 filets dab fish

  • 4 cups frozen spinach

  • 1 tbsp olive oil

  • 1 squeezed lemon

  • 1 pinch salt (not suitable for babies < 12mo, avoid if possible)

  • 1 pinch pepper

  • 1 pinch sumac powder

METHOD

  1. Defrost spinach with defrost mode in microwave for a few minutes (or simply in pan on low heat)

  2. Continue cooking spinach in saucepan on low heat by adding some olive oil and sumac powder and remove from heat once water excess has evaporated

  3. In one shallow dish, add spelt flour and pinch of salt and pepper.

  4. Break your egg in a second shallow dish and whisk

  5. Add quinoa flakes into a third dish

  6. Dip fish filet in flour until all sides are covered, then dip into the egg, and finally dip it through the quinoa, adding pressure so it sticks to it

  7. Preheat non-stick frying pan on medium-high heat and add olive oil

  8. Place quinoa coated filet in frying pan and fry on each side 2-3 min until lightly golden

  9. Add lemon juice before you remove your fish from heat, and let it sizzle for 30 seconds

  10. Serve hot on spinach and add another splash of squeezed lemon
