Little Italy Tray Recipe
INGREDIENTS
1 red onion finely chopped
1 garlic clove finely chopped
1 cup cherry tomatoes cut in half
1 cup sliced eggplant
1 cup orzo pasta
3 cups chicken or vegetable broth, boiled
(not suitable for babies < 12mo, avoid if possible, use plain water instead)
1 tbsp olive oil
2 tbsp grated parmesan cheese
1 pinch pepper
Fresh basil
METHOD
Preheat oven 180°C fan
Mix orzo pasta with boiled chicken or vegetable broth (or simply boiled water) in a deep tray
Evenly lay tomatoes and eggplant on top, then add red onion and garlic
Season with pepper and olive oil
Transfer to oven and cook uncovered until orzo is tender and liquid is absorbed, (about 20 min)
Remove from oven and stir, (add extra olive oil if necessary)
Top orzo with some fresh basil
Serve hot
