Cinnamon Apple Muffins Recipe (Sugar-Free)
INGREDIENTS
1 1/2 cup spelt flour
3 eggs
3 ripe bananas
1 apple (2/3 grated, 1/3 sliced)
1 tbsp cinnamon
40ml melted butter
2 tbsp plain yogurt
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
METHOD
Preheat oven 180°C fan
Mix all dry ingredients into a bowl (flour, baking soda, baking powder, and cinnamon)
Mix all liquid ingredients in a separate bowl (butter, yogurt, eggs, olive oil, mashed banana, grated apple, and vanilla)
Combine both mixes in a large bowl and mix well with a wooden spoon (mixture dough should be thick)
Use paper liners in muffin tray and fill with dough 3/4 of the way full (they will rise a little), then top with sliced apple, and sprinkle with cinnamon
Transfer muffin tray to oven for 20 min
Remove tray from oven and let it cool down for 10min
Serve warm or cold (great for breakfast and for goûter)
