Seasonal Pumpkin Muffins Recipe (Sugar-Free)
INGREDIENTS
1 1/2 cup spelt flour
3 eggs
3 ripe bananas
2 cups pumpkin puree (pre-cooked and blended)
1 tsp cinnamon powder
1 tsp pumpkin spice mix
40ml melted butter
2 tbsp plain yogurt
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
Optional:
1/4 cup dark chocolate chips
(not suitable for kids < 24MO)
METHOD
Preheat oven 180°C fan
Mix all dry ingredients into a bowl (flour, baking soda, baking powder, cinnamon, nutmeg, and gingerbread spice)
Mix all liquid ingredients in a separate bowl (butter, yogurt, eggs, melted butter, milk, mashed banana, pumpkin puree, and vanilla)
Combine both mixes in a large bowl and mix well with a wooden spoon (mixture dough should be thick)
Use paper liners in muffin tray and fill with dough 3/4 of the way full (they will rise a little)
You are free to add toppings if you want to! Such as almond flakes, or coconut flakes, or pumpkin seeds for example
Transfer muffin tray to oven for 20 min
Serve warm or cold (great for breakfast and for goûter)
