Quick Fix Fried Rice Recipe

INGREDIENTS

  • 2 cups leftover white rice (pre-cooked)

  • 1 cup minced pork

  • 2 cups diced broccoli

  • 1/2 cup corn

  • 1/2 cup sliced leeks

  • 1 red onion finely chopped

  • 1 garlic clove

  • 2 eggs

  • 2 tbsp tamari sauce

    (not suitable for babies < 12mo, avoid if possible)

  • 1 tbsp coconut oil, melted

  • 1 tbsp sesame seeds

METHOD

  1. On medium-high heat, add coconut oil, red onions and fry until soft (3-5min), then add garlic, and minced pork (5min)

  2. Add broccoli, leeks and splash of water (5min)

  3. Over medium heat, stir in white rice and corn for 2min

  4. Add whisked eggs and tamari sauce and mix (2min)

  5. Remove from heat and sprinkle sesame seeds

  6. Serve hot or cold
