Dark Chocolate Zucchini Cookies Recipe (Sugar-Free)
INGREDIENTS
1 cup spelt flour
1 cup oats
2 ripe smashed banana
(or blended, to make it extra smooth)
1 cup grated zucchini
(or blended, to make it extra smooth)
2 tbsp coconut oil, melted
1 tsp baking powder
1/4 cup 100% dark chocolate chips
(not suitable for kids < 24MO)
OR 1 bloc 50g “chocolat vie en rose” broken into small pieces (sweet alternative to the dark chocolate - not suitable for kids < 24MO)
METHOD
Preheat oven 180°C fan
Mix all dry ingredients into a bowl first and then add all liquid ingredients
Mix all ingredients with your hands
Shape mixture into about 20 balls (all the same size) and place onto parchment-lined baking sheet, then slightly flatten balls
Transfer tray to oven and bake for 14-15 min
Serve warm or cold (great for breakfast and for goûter)
Store max 5 days in fridge and up to 3 months in freezer bag
