Dark Chocolate Zucchini Cookies Recipe (Sugar-Free)

INGREDIENTS

  • 1 cup spelt flour

  • 1 cup oats

  • 2 ripe smashed banana

    (or blended, to make it extra smooth)

  • 1 cup grated zucchini

    (or blended, to make it extra smooth)

  • 2 tbsp coconut oil, melted

  • 1 tsp baking powder

  • 1/4 cup 100% dark chocolate chips

    (not suitable for kids < 24MO)

  • OR 1 bloc 50g “chocolat vie en rose” broken into small pieces (sweet alternative to the dark chocolate - not suitable for kids < 24MO)

METHOD

  1. Preheat oven 180°C fan

  2. Mix all dry ingredients into a bowl first and then add all liquid ingredients

  3. Mix all ingredients with your hands

  4. Shape mixture into about 20 balls (all the same size) and place onto parchment-lined baking sheet, then slightly flatten balls

  5. Transfer tray to oven and bake for 14-15 min

  6. Serve warm or cold (great for breakfast and for goûter)

  7. Store max 5 days in fridge and up to 3 months in freezer bag
