Beetroot Orzo Recipe
INGREDIENTS
1 diced ready-cooked beetroot (1cm pieces)
1 red onion finely chopped
1 garlic clove
1 cup orzo pasta
3 cups chicken broth, boiled (to avoid for baby’s <12MO)
250ml sour cream
1 tbsp olive oil
2 tbsp grated parmesan cheese
Fresh basil
METHOD
On medium-high heat, add olive oil, red onions and fry until soft (3-5min), then add garlic (2min)
Over medium heat, stir in orzo pasta for 1 min, then add boiled chicken broth
Simmer uncovered until orzo is tender and liquid is absorbed, stir often for about 10-12minutes
Add beetroot, sour cream and parmesan cheese and simmer 2-3 min, then remove from heat after
Serve with fresh basil
