Beetroot Orzo Recipe

INGREDIENTS

  • 1 diced ready-cooked beetroot (1cm pieces)

  • 1 red onion finely chopped

  • 1 garlic clove

  • 1 cup orzo pasta

  • 3 cups chicken broth, boiled (to avoid for baby’s <12MO)

  • 250ml sour cream

  • 1 tbsp olive oil

  • 2 tbsp grated parmesan cheese

  • Fresh basil

METHOD

  1. On medium-high heat, add olive oil, red onions and fry until soft (3-5min), then add garlic (2min)

  2. Over medium heat, stir in orzo pasta for 1 min, then add boiled chicken broth

  3. Simmer uncovered until orzo is tender and liquid is absorbed, stir often for about 10-12minutes

  4. Add beetroot, sour cream and parmesan cheese and simmer 2-3 min, then remove from heat after

  5. Serve with fresh basil
