Veggie Pie Recipe

INGREDIENTS

  • 320g ready-rolled puff paste

  • 1 cup cherry tomatoes

  • 1 thinly sliced zucchini

  • 1 thinly sliced red or yellow bell pepper

  • 250ml sour cream

  • 2 eggs

  • 2 tbsp mustard

  • 1 tbsp olive oil

  • 1/2 grated cheese (gruyere)

  • 1 pinch pepper

  • 1 pinch salt

METHOD

  1. Preheat oven 180°C fan

  2. Unroll the pastry and lay on a lined baking sheet, then puncture pastry with fork to make a few holes

  3. Spread mustard across the pastry

  4. Cut cherry tomatoes and arrange on pastry

  5. Evenly layer sliced bell peppers and zucchini on pastry

  6. Mix in a bowl eggs, cream, salt and pepper then pour onto pastry

  7. Add final layer of grated cheese

  8. Transfer pie to oven and bake 35min

  9. Remove from oven and leave to cool down 10min

  10. Serve hot or cold
