Gaga Banana Pancakes Recipe (Sugar-Free)

INGREDIENTS

  • 1 cup spelt flour

    (or 1/2 cup coconut flour & 1/2 cup spelt flour)

  • 3 eggs

  • 250ml cow milk or vegetable milk

  • 1 big ripe banana (or 2 small)

  • 1 tsp unsalted butter or 2 tsp coconut oil

  • 1 pinch salt (not suitable for babies < 12mo, avoid if possible)

  • Optional: 2 tbsp blueberry

Suggested toppings:

  • Fresh Fruit

  • Home Made Fruit Compote

  • Chia Jam (check out my chia jam recipe)

  • Grated Coconut 

  • Fresh Basil / Fresh Mint

  • Cinnamon

METHOD

  1. Whisk & Mix flour, milk, eggs and salt into a large bowl until blended and thick

  2. Mash banana till smooth and add to the mixture until blended

  3. Optional: Add blueberries to the mixture

  4. Grease saucepan with butter or coconut oil and add 1 tbsp of batter at medium heat

  5. Cook 1-2 minutes on each side

  6. Repeat until there is no batter left

  7. When ready to serve add your favorite topping
