Vegan Berry Chia Muffins Recipe (Sugar-Free)

INGREDIENTS

  • 1 cup buckwheat flour or spelt flour

  • 1/2 cup oats

  • 1 tbsp chia seeds

  • ½ tsp baking soda

  • ½ tsp baking powder

  • 50ml olive oil

  • 100ml almond milk

  • 1 tsp vanilla extract

  • 2 ripe bananas

  • 1 cup blueberries or raspberries (frozen or fresh)

  • 1 lemon zest

Suggested side dish:

  • Chia Jam (check out my chia jam recipe)

  • Homemade compote

  • Apple or pear confit

  • Fresh berries

  • Dried fruit

  • Plain yogurt

METHOD

  1. Preheat oven 180°C fan

  2. Mix all dry ingredients into a bowl (flour, oat, baking soda, baking powder, chia seeds)

  3. Mix olive oil, almond milk, mashed banana and vanilla in a separate bowl

  4. Combine both mixes in a large bowl and add lemon zest and blueberries

  5. Fill muffin tray and transfer to oven for 20 min

  6. Remove from oven and leave to rest 15min

  7. Serve warm or cold with your favorite topping
