Vegan Burger Recipe

INGREDIENTS

Burger

  • 1 cup black beans

  • ½ pre-cooked carrots, chopped (or any leftover veggie from a previous meal)

  • ½ cup cashew nuts

  • ½ tsp mild paprika powder

  • ½ tsp cumin powder

  • ½ tsp garlic powder

  • 1 tbsp tomato paste

  • ½ tbsp olive oil

  • 1/4 cup rice crumbs (similar to breadcrumbs)

  • 1 pinch salt & pepper

Burger buns

  • Use ready-made burger buns of your choice

Burger Sauce

  • Vegan mayo or classic mayonnaise

  • Barbecue Sauce

  • ½ cup chopped red bell peppers

  • ½ cup chopped spring onions

Burger extras

  • 1 avocado

  • 4 vegan cheese slices or cheese or your choice (Gruyères, or Cheddar…)

METHOD

  1. Mix all burger ingredients in a food processor (except rice crumbs) and mix for less than a minute

  2. Add rice crumbs (or breadcrumbs) to the mix and combine well

  3. Divide the dough in 4 and form a burger shape

  4. In a pan, cook both sides until brown and crispy

  5. Whilst cooking, prepare burger sauce by combining the mayonnaise, the barcue sauce, the chopped bell peppers and chopped spring onion (to taste)

  6. Toast burger buns in a toaster until crunchy

  7. When all of the above is ready, prepare the burger by including cheese and avocado
